Thai Coconut Chicken
2 Chicken Breasts (diced and sautéed with onions and garlic)
2 onions chopped
3 garlic cloves chopped
Then in a pan add:
1 can coconut milk
1 can coconut milk
4 cups of water
1 tsp. ginger powder
1 tsp. cumin
1 tsp. coriander
1 tbls. chili oil
Head of Bok Choy (or ½ spinach ½ bok choy)
(use all the stems because they get real soft)

2 tbls. chopped cilantro
Then add sautéed chicken, onions and garlic- serve
Squeeze in the juice of ½ lime and also some Chili Garlic
Sauce and pepper flakes.
You could also add rice noodles and or red and green peppers and or muchrooms!
