Tom and Elaine Coleman will be presenting at the Conference this year and Elaine will be doing hands on carving with attendees. Bison tool man will also be in the vendor room. Elaine will demonstrate with his tools and others showing off her carvings on porcelain. Elaine does not do many workshops so we are honored to have her join Tom for the Clay Conference.

John and Cheryl’s Thai Coconut Chicken

Thai Chicken Coconut Soup (Tom Kha Gai) Recipe

John and Cheryl’s Thai Coconut Chicken
2 Chicken Breasts (diced and sautéed with onions and garlic)
2 onions chopped
3 garlic cloves chopped
Then in a pan add:
1 can coconut milk
4 cups of water
1 tsp. ginger powder
1 tsp. cumin
1 tsp. coriander
1 tbls. chili oil
Head of Bok Choy (or ½ spinach ½ bok choy)
(use all the stems because they get real soft)
2 tbls. chopped cilantro
Then add sautéed chicken, onions and garlic- serve

Squeeze in the juice of ½ lime and also some Chili Garlic Sauce and pepper flakes.

You could also add rice noodles and or red and green peppers and or muchrooms!
